Our fine selection of craft beer was first brewed by award-winning home-brewer and BJCP Certified Beer Judge, Larry Cook, who cooked up his first craft beer in August 2005 and has been at it ever since. Since 2021, Thomas Derstein has taken over the brewing operations, keeping true to the signature brews of DCB while bringing his own award-winning recipes and fresh ideas to the brewery.  He makes sure we have a variety of beers available at all times to satisfy your taste buds at Dodge City Brewing in Dodge City, KS.

Thomas Derstein took over for founder and previous head brewer, Larry Cook, in 2021.  He loves keeping a variety of beers on tap and feels historical beer styles in particular pair perfectly with a town like Dodge City. 

Along with craft beer, Dodge City Brewing has brick-oven pizzas made with our fresh, signature in-house dough and pizza sauce. We carry fourteen traditional pizzas with a non-menu special pizza each Thursday. We built our process and recipes after attending pizza school in Staten Island, New York, so that you can enjoy the best-of-the-best!
